Rhubarb

Some years ago we planted Rhubarb, each year it grows huge, dying back during the winter months to just the corm which hibernates below the soil.
As the temperature rises in August / September the first shoots can be seen peeping through. Only one week ago there was nothing to be seen, yet in the photo the plant can clearly be seen at a decent size as it goes so quickly.
Rhubarb is classified as a vegetable, it makes the most fabulous desserts such as Rhubarb pie or crumble, it's great with ice cream or custard as well as for making jam.
We use it a lot inhouse in our Okapi a la Carte restaurant and it's very popular with tourists and locals alike.
